Planting and Eating Pansies

I finally got around to planting the pansies a couple of days ago. I also came across some old instructional cards the Chicago Botanical Garden must have been handing out back in 1997. They advise eating pansies. "In addition to their bold splash of color, pansies share a secret with a few other flowers--their petals are edible!" If I pick all the existing leaves off, I just might have enough for dinner.


Tip: It says "For a special effect, try crystallizing blooms by painting the petals with beaten egg whites, dipping them in crystallized sugar and drying them on wire rack until crisp." Can't find the calorie count...
